Are you talking about whipt cream stabilizer so your whipt cream won't deflate? There is Dr. Oetker whipt cream stabilizer. it is called Whip It, comes in samll envelopes and is powder form. Go to www.baking911.com and search under whipped cream. You will find a lot there about whipped cream too.

A stabilizer can be lots of things. Depends on the context. There are dough stabilizers, too. Many others.
