I hope this isn't a dumb question. In the chocolate ganache recipes it calls for 12 ounces of chocolate. Exactly what kind of chocolate is it? TIA.

Hi!

Do you mean "Chocolate Ganache 1"? This recipe calls for semi sweet chocolate. Look at the introduction.
But you can also make ganache with milk chocolate or white chocolate you only have to increase the amount of chocolate.
