Mmf Question

I have been a member for a while, but haven't posted. I've tried to post pictures, but for some reason I never can get them to work.

I have my first wedding cake scheduled for July 8 in the south! It is most likely to be around 100 degrees temp. The reception is inside, but will still be warm.

Will the MMF hold up in the heat/humidity? Any suggestions? The bride said she wanted buttercream when I asked, but I don't think she even knows about fondant and is young and not very informed. The groom is a family member, so the cake is my gift. (his mother was the photographer at my son's wedding, so this is payback) They have told me the basics of what they want, but left it up to me, so I can do whatever. I'm just concerned about the heat. I'm going to do fondant hearts scattered over the 3 tier cake with small royal icing or fondant flowers as accent/borders.

I appreciate any advice.

if you can keep the cake regrigerated right up until the reception, you might be ok. check out the eception hall and see if there is going to be a place to keep it cool until needed. Otherwise really pay atention to teh qualities of certain buttercream recipes to find one that stands up better to the heat.

Fondant would be the ideal one to use. Forget Buttercream, it will slide down the cake, at 100 degrees. At least they are not being demanding. Maybe let them know what you came up with in advance. Not asking their opinion, but you are just telling them what you are making. icon_smile.gif
