I'm freezing 2-9" layer cakes (no icing) this week for a party at the end of next week--I'm going to be out of town and will only have a few hours to ice and decorate right before the party. I plan to let them fully cool, then wrap each layer well in Saran and then foil before freezing. I read somewhere that you should unwrap before thawing to avoid wetting the cake with condensation. Does that sound right?
Also, any thoughts on how long it will take to thaw them? And can I start icing and decorating them before they're fully thawed?
I don't know how long they take to thaw out, but I left mine wrapped up to thaw. They were fine. What kind of BC are you using to decorate?
I'm icing with half Crisco/half butter BC, but also have RI and MMF pieces to attach.
With a frozen or half-frozen cake you will need to give the icing more time to crust since the frozen moisture in the cake will evaporate as the cake thaws and will leech into the BC.
While the BC is crusting during the cake thaw, you may see "moisture drops" on the icing. Don't panic! This is caused by the moisture in the frozen cake and BC coming to the surface. Don't try to wipe them up or anything. Once the entire cake comes to room temperature, these "drops" evaporate on their own and it won't effect the final product.
Also, if you are using fondant, you might want to be careful, because the moisture might mess up the fondant.

Is it easier to frost a frozen cake? I have a fbct (entire cake top). I don't want any of the colors to run so should I let the cake thaw first?

I prefer to ice unfrozen cakes myself.
I have thawed my cakes in the fridge and also out of the fridge. Leave them wrapped until completely thawed and then remove the wrapping afterwards.
I think I will frost it thawed. My only other question is should I put a syrup on them? One is Fun Fetti box mix and the other is a Red Cake, both box mixes. Do I apply this after they have thawed or while they are thawing? Thanks for your suggestions.

Apply the syrup after the cake has thawed. It absorbs it better.
I always frost a thawed cake if I have the time
