1St Time User Of Gumpaste, Why The 24 Hr Wait After Mixing?

I just mixed my first batch of CK gumpaste. I thought I would be attempting a shoe tonight, but then read the directions and realized you need to let it "rest for 24 hrs". Does anyone else use this brand and do you wait the 24 hrs? My mixture is the consistency of fondant. Any suggestions as to the consistency when making the high heeled shoe? Should it be stiff or softer and pliable?
Even with Nic Lodge's recipe it needs to rest for at least 11 hours. It takes that long for the gums in the paste to achieve that just right texture, not too soft and sticky, not dry and hard and when rolled out you can thin petals without them tearing, the rolled and cut paste dries faster. If you try to work with it when it is still soft you will end up having to use cornstarch to keep it from sticking and that will change the texture and the finished product will dry with cracks in the surface.
I have not bought premade gumpaste, I use Nic's recipe and like it very much.

I have used the ck brand and I like it and I don't I find it a bit soft at times... so for most flowers it is great but I do not like it for roses unless it is a week or so old... I have never made my own just used the mixes... I actually prefer the wilton over the ck but the ck is cheaper so I stock up at hobby lobby when they have the sale.
I need to make my own and compare.
