How Do I Create Pleats On Doll Cake?

How do you get pleats done in wonder mold or other skirts for dolls?
What are fondant "logs"?

I made a doll cake and used what I think you are calling "logs". I just rolled out fondant like little snakes. I attached them to the cake, then layered the fondant skirt over that.

There is a picture in my photos.

Are you using fondant to cover the skirt? If so, then to create pleats you would need to fold the fondant just like you would material.
