If I make a few batches, I'm assuming they'll be good for the weekend.
I'm planning on all butter ones, or maybe a little shortening, but no other dairy to speak of . Put them in the fridge and then rewhip?

Yes should be good to go. I often store it for a few weeks and have not had any reaction.

Yes they should be good to go. I also make many batches at one time and store them in the fridge. Never had a problem.
