What makes this an expensive cake?!?!?
I heard or read somewhere that the small amount of cocoa was to offset the taste of the large amount of food coloring.
I think everytime I read this board it's a bad thing... but in a good way

LOL I baked a lemon cake at 1 am a few days ago for that same reason! LOL
All I can say is here in Texas - you ain't no baker if you don't know how to make RV cake!!!
Just kidding, but I do agree with the other replies that say it is bigger in the southern states. I get A LOT of requests for my red velvet cake, and it has been compared to the top bakerys in the area
! My recipe basically is a twist on the German Chocolate cake. I use sour cream in my GC recipe and also add the red food color - yes 1 entire ounce. I have never heard any complaints on it tasting like chemicals at all!
As for frosting I am an avid believer in Cream Cheese only! I think BC is just sac-religious for this beautiful cake.

AGREED on the cream cheese. Any other way is just, well, wrong. Red velvet is one where you have to use the best ingredients though. A box just will not cut it.
We are used to buying all types of ingredients for cakes, so for us. it's not expensive. Shoot, we probably all have the ingredients on hand right now. But, the average cook probably isn't used to putting vinegar, buttermilk, cocoa, and a whole bottle of red food color in a cake. I also use cake flour for mine. Then, you gotta buy cream cheese, nuts, powdered sugar, etc.
It is kind of funny, but everyone assumes that this is such an expensive recipe, and therefore will expect to pay more for it. Even in my area, you can get a little more for red velvet. And no one wants to pay for anything around here.

I grew up in Kentucky, didn't realize that RV cake was a regional thing until I started moving around the country and people had never had it before. (some hadn't even heard of it) I think it is delicious and is a great alternative to an every day chocolate cake.

Red Velvet Cake has it's own unique taste. I believe it's because it contains the one ingredient that other cakes don't... Vinegar! I'm pretty sure that the vinegar is there to help with the red food coloring. I'm from the South but now live in the Pacific Northwest. I have introduced Red Velvet Cake to my fellow employees (I work at a hospital) and they love it sooooo much that it is one of my most requested cakes. It's hard to describe the flavor of something that has it's own flavor. Just know that it's one of the best cakes you will ever eat!!!!! ![]()
As a matter of fact, I have to make 2 Red Velvet cakes next week for Birthday Orders.

I do exactly this but add a little extra buttermilk and 1 extra egg... .my mom had it for the 1st time yesterday since my mawmaw passed years ago, and I said do you recognize the recipe it is your mom's, is it good?
