Any Diabetic Cake Decorators Besides Me?

I just started taking classes, and Im getting sic of Icing already(frosting) which is good! but Diabetes 2 + Cake making =???

Kirah, I'm not diabetic but I've been on the low carb diet lifestyle for almost 1 1/2 years. I very rarely have the urge to sample my icing or cakes. In fact you will notice in your classes that alot of students will lick their fingers with the icing thats on their tips when they wipe them off. Our teacher actually licked hers off the tip. It was all I could do to keep from laughing. Pam from Bama.

I'm diabetic. Type 1 1/2. I have insulin resistance as well as a non-functioning pancreas. I get the "best" of both worlds.

I have found that I don't really like eating cake anymore. I am on an insulin pump, so if I get the urge to splurge, it's not a big deal.

Of course, lately my control sucks because it seems I just can't balance life, potential job layoffs, selling a house, having another one built, starting my oldest in K in the fall and finding aftercare for her, dealing with my 3 year old .... hmmm no wonder my control sucks!
