I made a lemon cake for my mother in law for mothers day I have a lot of scraps left over does anyone have any ideas as to what I can use this for icon_confused.gif Ive seen the recipe for cake balls but it looks like its for chocolate cake only please help I really dont want to throw this away.

How about a trifle or parfaits?! Lemon cake w/ lemon custard or pudding, maybe some fresh blueberries and some whipped cream. Mmmm! Some graded lemon and decorate w/ a mind leaf! YUM!!

Leftover scraps? di you say LEFTOVER? seriously?

I have a 4-year old son, a 40-year old husband, and a dog.

I've never HEARD of a leftover scrap....not in MY house! icon_biggrin.gif

You could do the cake balls with the lemon cake, leave out the cocoa powder. I'm not sure about what type of liquore (sp) to use, maybe Grand Marnier. Add a few extra crumbs or some extra powdered sugar to compensate for the cocoa and I would either add some pecans or the mini chips and dip in white almond bark...Yummmmmm

I use lemon cake to make cake balls, I add some chopped up craisens and chopped fine pecans and either lemon buttercream or almond buttercream or amarula liquer and dip them in white chocolate.

In Toba Garrett's Cake book, she uses scraps mixed with buttercream and a bit of preserves to make a spackle paste. You can use this to crumb coat your cakes. She says people will often taste a nutty quality adding to the cakes flavor.

I have not tried this yet because I usually end up eating a lot of the scraps (did I just say that out loud?) and never have enough. icon_biggrin.gif
