I'm very new to cake decorating...and this is such a GREAT site!! My question is I baked and cooled 2 10in heart cakes last night,I wraped them in parchment and plastic wrap. This morning when I unwraped them they felt "wet" WHY????

I think it has something to do with the whole condensation thing. The cakes are moist and when you put the plastic wrap on top it holds in the moisture causing a sticky, wet layer on top.

Also, you have to make sure they are completly cool when you wrap them up. I always let mine cool on a wire rack , and then wrap them up.

I did let them cool on the wire racks at least 4 hr. they felt cool to the touch.

I always wrap my cakes in plastic wrap then aluminum foil while still warm and freeze. When they thaw, they are very moist, but I wouldn't call it wet. I have never used parchment to wrap a cake though. Maybe that has something to do with it???

I know what you are talking about, I think, kinda sticky on top? Did you use a box mix, and was it a yellow/butter/vanilla? Mine always do that too.

Yes it was a box yellow cake mix,and your right it was more sticky then wet. I have a wedding cake to do next month (my first) and I'm unsure of how to store the cakes, I was hoping to bake them the Thursday wrap them,and decorate the morning of the wedding,I just dont want them to be "sticky" I have never froze a cake,so I'm unsure on how to do that.

I wrapped mine up, froze it, and then after a week when I pulled it out of the freezer, I just trimmed the top off. They always turn out ok; I just don't know why it does that on top.
