Cake Freezing

Hi ladies,

happy Mothers Day!!! I have never frozen a cake before decorating. Is it easier to smooth the icing? And do you let it thaw before decorating? And my biggest, most important question is... Is it as moist as a cake not frozen???? Thanks

I freeze them all the time! It helps me to get things done ahead of time. I just pull them out of the freezer the night before I need them, leave on the counter while still wrapped, to thaw. In the morning I am good to go. IMHO they are just as moist, if not more so! Regarding the icing, I see no difference in that either way~

I would definitely thaw the cake before icing it. I iced a frozen cake once and the moisture kept seeping out of the icing and I kept having to dab away water drops from the top of my cake.........

Some say to ice it frozen but I think letting it thaw a little is better... I agree with dogluvr I noticed the same thing happening on some of mine..
But freezing the cakes seem to make them a tad moister I think... and helps on time as well...

I nearly always freeze my cakes. More for convenience than anything. Usually with work, dinner, homework etc. Idon't have time to bake except on the weekends. I wrap really well w/ plastic wrap and let thaw completely before taking the wrapping off - never had a complaint!

I freeze my cakes to make them moister too.
When they have completely cooled, I wrap them in plastic wrap and then I wrap them again in freezer paper. This keeps the frost bite at bay, and also will keep any smells that are in my freezer out my cake.
When I am ready to decorate, I remove my cakes out of the freezer at least an hour before I am ready to decorate. I lay them individually out on the counter still wrapped to allow them to defrost faster. While I am defrosting the cakes I will cut my boards if need be and then cover them. If the cakes are not defrosted yet I will mix any colors up that I may need.
