Stabilized Whipped Cream Question

Hi!

I am using Wilton's stabilized whipped cream recipe to fill a cake (it is being iced in BC) and I would like to know: if I keep the cake refrigerated up to the time of delivery, how long can it then sit out of refrigeration before there is a safety concern? I have a bride who really really wants it, but she would like the cake to be out and visible during her reception. She is thinking it might need to be out for 3 hours. Do we think it might be safe?

My strawberry cake had whipped cream with unflavored gelitin to help stabilize with fresh strawberrirs mixed in I made it in evening then refridgerated over night when he took it to work in the morning he left it in the break room and he said it was fine untill the last piece was eaten in the afternoon.

Food safety rules - food can sit out for maximum of 4 hrs safely. If the room is really warm then consistency is what I would worry about first.
