I am very proud of this cake considering what I went through.. It is now 12:08 am here in california. This is my first sheet cake since I have been decorating.. It is an 11 x 15.. I wanted either a decorator preferred or magic line, but my cake supply was out and i really wasnt up to driving 25-30 minutes to their other store to get one if they had it... so I used the wilton performance pan.. YES slanted sides LOL


In addition to this being my first sheet cake, it was the first time I made batter of more than one mix.. and I bake from scratch so after I creamed th butter and added 10 eggs to my KA.. I had to take it out, put it in my HUGE tupperware bowl and mix by hand.. Then I had too much so I put the leftover in 9 in pans. yes I had that much left over. I put them in the oven and baked for longer than 40 minutes, but when I finally took them out, the 9 inch pans were goners... really crusty on the bottom. but they tasted good on the top LOL. the big one took longer probably becasue the lil ones were on the bottom.

anywho I needed to torte the cake.. yes I like to bite off more than I can chew so as I was flipping the cake I had it by the edges of the flimsy cake board so IT BROKE!! run to CC to look up, broken, cracked, paste, patch and anything else to see if I can fix it, becasue i will be a monkeys aunty if I lose all that cake. so I made some of the spackling paste that is talked about on baking 911 and got to patching..

All of this becasue I will see my aunt tomorrow and she acts like because I am young I can't bake as well as her.. and I can.. so there! (we have a lil friendly competition going on).

One thingk I can say is DH was very proud of me and UI was happy that he was interested.. he came in while the cake wasnt iced and saw the progression from there.

Thanks for letting me vent so long, and no the cake isn't the best but it looks so good considering! this is butter cake with strawberry mousse filling (with pastry pride and preserves, so it will be out for the night! or morning

Cake nightmares are the worst!!! But this is a beautiful cake!! you should be very proud of yourself. Don't you feel good when you can fix something that's broken?

I'm the one from Elk Grove, CA...well first of all, I think your cake is wonderful..Looks a lot better than COSTCO (no offense, since I just bought one over the week-end)...

OK, how about showing us what your dear Aunt can do ? I'm dying to see !!! Since she loves to compete, is she in the Sacramento County Fair Cake Decorating Contest/Show next week - 5/23rd ? Because if she is, I was just gonna say, I hope I will bump into her. I'll be there Monday bet: 3-7 PM to drop my entry..

What a great story, it displayed struggle and finally success. It just shows you are going to go very far in this field. How did the cake taste?? It looks really good. It's great that you didnt give up and persevered with it. Large cakes like that are very hard to tort and fill, because as you discovered they tend to fall apart. I often use a thin cake board the size of the cake, just to lift the cut pieces and then use it as well to place on top of the cake. This works *most* of the time, except if the cake is super soft, in which case little bits always seem to break especially since i cut my pieces in 1/2 inch layers ; ).

Funny u mentioned about COSTCO.. my moms bday cake came from Sams Club and I love costco cake, but the sams club one was HORRIBLE to say the least.. it was pretty thouhg. But u could even see the seam where they joined the two cakes together.

Her decorating skills leave ALOT to be desired.. LOL but she can bake a GOOD cake.. She liked the cake and actually praised the look and the texture and said "you made that????" and was very pleased.. My Mother in law (her sister) was very happy she knows we have this lil competition going on and actually told me to make usre it was good and big and pretty LOL.. I took about 4 pieces home ( it was 11x15.. so I felt good about that.. people were going back for seconds. The filling was strawberry preserves, and pastry pride.. the only think My MIL said was that she wanted fresh strawberries and whipped cream (but she ate two pieces too! LOL) I'm partial to things that don't have to be refrigerated becasue I will heat my cake in the micro if it is cold (can u tell I don't like cold cake)


I was actually glad for this experience becasue I have to bake a 10 and 8 inch square stacked cake.

Oh yea and we took the cake to Vallejo (about an hour away.. and we were 5 minutes away from our exit and the dang cake slid.. I was so hurt.. but it still looked and tasted good

Thank you Nati! That means alot coming from you! I learned from CC to use a cake board to silde my layer off that was funy. me shimmying the board under the cake but I'm sure that stopped it from breaking more.
