I made Colette Peter's chocolate cake last night and I forgot the eggs. Do you think it is okay? I am going to be stacking 4 small layers together and carving them into a backpack shape. Do you think the cake will hold up? I do not want a disaster I had a horible one last week and I just could not bear something to happen. Plus it is a cake for my boss's son.

By the way.... i did taste a tiny amount of the cake and it is delicous and super moist. I am just wondering about the cake's integrity?

No eggs? I wouldn't chance it. From a food science POV, the eggs are necessary. Their protein helps provide structure in baked goods. A tiny piece might be ok, but it has to have an effect on the overall cake texture.
That being said....and this is just MY opinion....when something like this happens, it's more about YOUR integrity than the integrity of the cake. You wouldn't want that to be how people remember you, do you?
We all make mistakes. We've all tanked our fair share. Toss it or use it for cake truffles or snacking.
It's only cake and not worth your reputation!

If you deliberately want to make a cake without eggs you usually add something else in place of the eggs, milk, torfu etc.

Oh dear! Still you won't forget the eggs again in a hurry.
