A Few Mmf Questions

I am making a 4-tier wedding cake for next weekend, it will be covered in MMF. I have made smaller cakes covered in fondant, but not a large cake, so I am a little nervous.

Can you guys tell me how many bactches of fondant I will need to make to cover a 15-12-9-6?

Also, the cake will be filled with chocolate ganache, so I will need to refigerate the cake, will this be okay?
