Quick Help! Fresh Strawberries

How long can you leave fresh strawberries out on a cake before they start getting yucky or getting cake "wet"? I put some on this a.m. and now the cake top is beginning to sweat some. I put it in the frig. It's covered in chocolate BC.

I did a cake with fresh whole strawberries. I decorated one afternoon kept it in the fridge untill the next day. The strawberries wern't the freshest to begin with so the next day the looked a liitte old.But not that bad. If you sliced them I am not sure maybe someone else will know.

I would leave the cake in the fridge until about an hour before you plan to serve it. If they were nice and fresh to begin with they could probably sit out sliced most of the day and still "look" okay. The real problem I think is like you said, they'll start to leak juices on the cake.

I did a cinco de mayo cake recently that had fresh strawberries and I placed the sliced strawberried on a paper towel first to absorb any extra huice before I put them on the cake. I kept the cakes in the fridge and they were sitting out about 4 hours when we left they still looked okay.

Whenever I have covered strawberries with chocolate they looked pretty bad the next day. I kept them in the fridge. I think the biggest problem is the juice. I wouldn't put them on until the last minute.

Thanks koolaidstains. I just put the whole cake in the fridge here at the office and the boss loves it! I told him to be sure that when he got it home to the Missus that they put it back in the fridge and take it out right before their ready to serve it. So hopefully, that will take care of itself. As much as I think I know about cake decorating and I learn everyday there's something else I don't know icon_smile.gif

Brit, your cakes are beautiful! How did you do that with white chocolate on the sides of the cake?? PLEASE PM me with the how-to's on that. That's probably the most breathtaking cake I've ever seen with fresh berries!!!
