I am going to be entering into a cake contest *hopefully* this summer and one site says you need to use dummy cakes and another site says you can use real cake mixes but nothing boxed no pre-made cake mixes .. butttt it must hold up or it will be thrown away .. I used the cake mix extender recipe several weeks ago and it made the white boxed cake mix that I used much firmer then normal and I think that would do good in the summertime, but I would also need a scratch cake recipe to go with that ... I dont know how to make a cake from scratch .. anyone out there with a good recipe for this dilemma I am in? The recipe must also be turned into the county that is holding the contest and it becomes their property so hopefully someone won't mind sharing their recipe with me for something like that and won't mind it being turned in either ... thank you for any help!

I think I would just use dummy cakes so I didn't have to worry about how a scratch recipe would turn out and hold up. Can you maybe verify if dummy cakes are OK?

I would definitely find out for sure which they want dummies or real scratch cake. I would definelty go with the dummy if they will allow it.

well from my understanding you can either use a dummy or a real cake, if its real the recipe has to be submitted and the cake is judged within a few hours of the cake being entered it might just not last the whole week on display .. my only problem with a dummy cake is ... I CANNONT FROST THOSE DANG THINGS TO SAVE MY LIFE!! If I could I most likely would use those .. my dh suggested popping out a little hole in then and then dropping fish weights to weigh it down .. I just dont know if that would be allowed . I have never entered a contest before and I am a little confused by all the rules .. I never would have imagined there would be so many! If there are any hints on how to decorate dummy cakes I am all for that as well!

When I ice a dummy cake, I put a little icing underneath it to "glue" it temporarily to my turntable. That really helps keep it in place. Also, I prefer to do dummy cakes out of all royal or a combo of royal, fondant, and gumpaste.

What about a rice krispie cake? You could even change the recipe for making the rice krispie treats if you wanted, you know, add chocolate or peanut butter or something special, so it is not just marshmellows and rice krispies. I have always used this when I need to use a cake for cake class, it holds up REALLY well for decorating, is very stable. Technically cheating, but it is nice medium between cake dummies and real cake

sorry, when I mean "cheating" I only mean you don't do everything from scratch. I don't cheat all the time, just when I need the time it saves or when it really improves the result
