Help With Mmf!

What consistancy is your MMF when you take it out of the KA? I made it last week 2 batches and when I went to roll it out it was VERY touch and cracked with air bubbles in it. icon_mad.gif

Any suggetions for how to help this. I think I added too much ps but don't really know what its suppoed to be like out of the KA. icon_redface.gif

I made MMF today and when it was finished it had a doughy consistency- almost like a sugar cookie and then you wrap it up to firm up-

I pulled it out of the KA and put it in saran wrap right away-

I kept some out to play and color with and it was so amazing- it tastes great and was really easy to work with-

I used Crisco to help knead it a tiny bit- mine was not dry in the least-

I followed the exact instructions fro making MMF with just water and flavoring- it worked really well-

did you sift your PS?

The other thing I read is to use crisco before you start to work with it and you can also put it in the microwave for a few seconds to get it soft again.

I had the same problem. It was a really thick dough and then when I wrapped it up it was way hard. It was my first time making it. But I feel you pain!

I just made three batches - I nuke a small bag of marshmellows in a greased bowl with 2-3 tbsp of water and 1 tbsp of crisco. Then I grease my KA bowl and dough hook - dump in the powdered sugar and make a well. Once the MM are melted, I stir it with a greased spoon to make sure it is liquid, add my colorings and then dump it in the KA. Mix on low speed until it starts to incorporate, I may add another tbsp of water or crisco depending on how it looks. I then turn it out and Knead my ears off until it is smooth - if you use just PS to kneed it will look similar to bread dough - if you use the crisco knead it will look like silly putty. Then I wrap it and leave it unrefrig until I am ready to use it. If it does get hard I nuke it until it is soft then using crisco'd hands I rework it.
Bubbles may mean you need more crisco/water. Mine always, always gets hard if I leave it for more than a day or so... but I revive it with the extra moisture and microwaving.

When your mmf is done it should be about the same consistency as playdoh.
I've heard too many horror stories about people blowing up their KA's with mmf, so I do mine all by hand. I grease the bowl I'll be working in with shortening, toss in my mm, water, and any flavoring I'm using, and add about 1 Tbs of shortening. Then I pop it in the microwave until the mm's melt, pull it out, and start adding my ps. I use a shortening-coated mixing spoon until it gets to thick to mix like that, then I plop it out onto my vinyl mat and knead it until it's the consistency of playdoh.
Before you wrap up a lump of your fondant, slather it in a thin layer of shortening. Then wrap in plastic wrap and seal in a ziploc bag with the air all squeezed out. It will be a little hard when you try to knead it again, but the heat of your hands will get it back to a workable texture fairly quickly. If it really is too hard to do anything with, put it in the microwave for a few seconds at a time until you can knead it. Try not to do that too much, though, because it will break down your mmf if you do it repeatedly.

...dont add all the powdered sugar it calls for....its usually too much.
And I wont use my KA...do it by hand so you can feel what it needs.... icon_biggrin.gif

My mmf was like playdoh out of the mixer..Maybe a little stiffer.. I'll really have to watch it.

This is what just happened to me, and I went to roll it outm, and it seemed so dry and heavy. The MMF really needs to have crisco in the recipe. I added about a tablespoon full of crisco to my MMF and mixed it in using my KA. That worked perfect! Just make sure you get a little crisco in with it.

BTW, my MMF was two weeks old before I found the time to go back and try and fix it with crisco. I spend more time reading this site trying to soak it all in LOL.

It will be semi soft when it comes out of the KA. Rub it down with crisco and wrap it in saran wrap and put in an airtight container overnight. When you get ready to use it it will be pretty hard. Break some off and microwave it for 5 seconds and knead it for a minute then roll it out. You should get pretty good results this way. also the recipe i used called for 2lbs of PS ( I only used 1.5 lbs and it came out perfect so yes you may want to use less in your recipe.)
