Beginner Icing Problems

I am just starting the Wilton 1 class and am having some trouble icing my cakes. When I try to spread the icing, the cake seems to tear a little bit (it isn't really crumbs but kind of like the top layer of the cake coming off). It seems to work better when I use a tip and then spread the icing, but then I feel like I am getting too much icing on the cake.

Any thoughts on what might be wrong? Is it a problem with my cake or the icing?

You could thin your icing down a bit. And don't let your spatula touch the cake. I use the icer tip and then remove icing as I smooth.

I have the same problem sometimes when I don't get my icing thin enough. You can also put your cake in the fridge to make it "hold up" a little better.

It sounds like your frosting is a bit stiff. Try using milk or half and half for your liquid. It tastes great and gives a different consisitency that's easier to pipe.

Sounds like you are frosting a freshly-baked cake. I bake two days or a day before I decorate. I wrap my cakes in saran wrap and put in the fridge. Refrigerating my cakes makes it firmer and easier to frost. HTH.
