I just made a scratch yellow cake with raspberry and bavarian cream filling. A few things happened: My cake came out so dry and crumbly and tasted stale after I had just baked it! icon_redface.gif I had to doctor it up with some icing to even get it to hold together. Once I picked up the cake to move it to the fridge, it split down the middle in three places and slid right off! icon_sad.gif The filling slid right out, too! Where did I go wrong?? Everytime I go to make a scratch yellow cake this happens to me (the dry and crumbly part)!! I am so tempted to just scratch the scratch cakes all together and just go boxed! Thank goodness for Duncan Hines!! icon_cry.gif Help!!

Hi there,

It could be one or several factors that created the dry and crumbling cake. Here is a good place to start. Go down to the "Cake Problems: What Went Wrong Chart" on this link;

If you can't figure it out from that, then it might be that you need a better cake recipe. Here is one that produces a wonderful flavor and is very moist but does not crumble;

You might also want to freeze your layers that way you can then add your fillings and decorate while it is frozen. This is a good way to handle extra tender and moist cakes that otherwise need to be handled gently.

I'm so sorry this happened to you. I have no help for you unfortunately. I make all my cakes from scratch and they come out very moist... Except.... for the yellow cakes!!! I'm with you. Mine come out like cornbread. I'm still searching fot the perfect yellow cake scratch recipe. If I find a good one I'll let you know. Do the same for me please icon_biggrin.gif

Im not sure what you guys call a yellow cake. I make a buttercake with whole eggs that comes out pretty good and is very versatile to use for different things.
