I am doing my first ever wedding cake as a gift for a friends daughter. She chose the cake on page 89 of the 2006 Wilton year book, Plumeria Promise. Due to time constraints, (I work full time) I will be using DH white cake mixes. My numbers have come out very high (20 - 23 mixes?) If someone could check this out and let me know if i'm way off or pretty much on target I would be very grateful.

I consider one box to equal 20 small servings, if that helps.

using the chart in the yearbook

6 rnd........3
8 rnd........3
16 sq..... 15.5
12 rnd.....21
10 sqr.....12

Total......54.5 cups

@4 cups/box = 13.625 boxs....so 14 boxes
(conservative estimate...sometimes get 5 cups to box)
(then of course, are you going to use the cake extender recipe?)

I don't know about Duncan hines but Betty Crocker French Vaniila and White cake mixes have 1 less cup of batter than the chocolate fudge mix.If you use the extender recipe for the cakes it will make for a denser cake which is good also.I sometimes add a few drops more of Vanilla or chocolate flavoring if I add an extender.

the cake matrix will also break it down by cake mixes per size pans used.

What is cake extender? Is it the 1 box instant pudding and one extra egg?

I plan on using the Duncan Hines white cake mix, I see that many "doctor Up" the recipe.. Can I ask why? Is it not moist?

I use the DH white cake mix with 1 box of whitechocolate pudding and 1 additional egg and i get 6 cups of batter out of it. HTH I have noticed though the BC white mix i only get 4.5 cups out of it. So make sure you measure your first box mix (no matter what flavor/brand you use) so you have a reference.

But it's always better to have one or two extra on hand just incase! you can always use it later.

For future reference this wilton link has 4 links on the bottom to baking charts for 2" and 3" cake with party and wedding size servings. It list how many cups per pan you need for batter/icing, and temps to bake at and how long.
