I am planning on making alot of buttercream (all butter recipe -- hate the crisco ones) roses (on Monday evening) for my son's communion (on Sunday). Between work and kids, I'm pressed for time this week and really need to make them Monday evening. I was told to make them and freeze them. When I decorate the cake, I can put them on the cake frozen.
Questions:
1. Should I let the roses dry before freezing them?
2. Do I thaw the roses before putting them on the cake? The cake will be covered in the same buttercream and I was wondering if I would have any "condensation" issues.

No need to let them dry to freeze them, and it is MUCH easier to get them on the cake while they are frozen. I use a butter knife to lift them off the parchment or waxed paper and gently place them on the cake. MAKE EXTRAS!!! I think I usually break a few...lol

I have never run into any problems with putting frozen roses on a cake.
If you are so worried about having any problems with the roses, why don't you try making them in royal icing. They get hard very quick.

I always freeze my buttercream roses.... whether it is for something in advance or they are going on the cake that day. I put them right in the freezer, and while I tidy up, they harden and are so much easier to place
on my cake without the dreaded "toppling over" or "smushing"
So, at this point the kitchens all tidy....I place on the roses, pipe some leaves and voila...fete compli!
You guys are so awesome! I can't begin to tell you how much I've learned since I joined this site. Usually, it's my sister who has all the answers. But recently, when talking about cakes, frosting, etc., I started spouting all the stuff you lovely ladies have taught me on this site. My sis kept saying, "I didn't know that." It was great! LOL!
