a customer requested chocolate bc. it has a very good flavor but i want it to taste more fudgy and be darker in color
any suggestions?

Do you use cocoa powder or melted chocolate?

I used cocoa and then i added 4 squares of semisweet choc. and it did not deepen the color or flavor enough, should i have only used the squares?

They make a dark cocoa; you could also use dark chocolate to try to make it darker.

I thought about this too! I have tried to make darker chocolate BC but had to add so much cocoa powder that it was dry and cracked. I need to do a dark choc. bc cake and thought about adding some brown food color to it. Has anyone tried this?? usaribbon.gifusaribbon.gifusaribbon.gif

I have.....tried adding brown color....does not really make much of a difference unfortunately....at least that was my experience.

I tried brown coloring once, as well. No difference. Just a waste of color and time.
