I've used both BC and cream cheese BC on my ice cream cakes. Be sure to set the cake out for about 15-20 minutes before cutting it.

You can bake the cake in any pan, but I wouldn't store the finished product in a pan. What I do is soften the ice cream, line the pan (that I baked the cake in) with plastic wrap, such as Saran, then cover it and freeze it. I lift out the ice cream when it's frozen, then place it on the bottom cake layer, then top the ice cream layer with another cake layer.l I hope this isn't confusing!
When I'm all done, I first put the cake in the freezer, on a covered cakeboard, unwrapped, for about an hour so that it will firm up, then I put it in a cake box, and put the box inside a plastic bag and seal tightly.

There is a section on this web site in the articles that shows how to do an ice cream cake. I followed the steps in this article. Very easy to do!!

I mostly do ice cream cakes...now for the past 2 years. I have alot I'd love to share with you. I'm out the door for son's speech lesson, but will write more later this evening. Don't pull your cake in and out of the freezer a lot of times to decorate, as it will sweat, collect water and actually start hardening as ice. It makes your frosting very hard. I mostly use fondant images now, choc. melt images or FBCT images. It's quick and easy to drop on your cake and means less time out of the freezer. Talk to you later.
