About a month ago we found out that my son is allergic to eggs. I have been searching all over for a decent chocolate cake recipe w/o eggs. I found a couple and tried it out. Then I came upon a product called Ener-G an egg replacer . My word of advice STAY AWAY from it. I made a martha chocolate buttermilk cake with the egg replacer and i have huge holes and this is despite using cake flour. the ENER-G just has a lot of soda bicarb. I tried it twice and failed. Today I will try another recipe w/o the egg replacer. The party is this sunday. i work full time and am having 35 people and i still have to bake the cakes and cook and clean and...
I have a great chocolate cake recipe that uses Miracle Whip instead of eggs adn oil. I don't know if Miracle whip is made with eggs like regular Mayo is. If you want it, I'll give it to you.
talking_head, do you know for certain that your son is affected by eggs in baked goods? My best friend's DS was also diagnosed at 11 mos. with an egg allergy, but he seemed to be just fine with cake and breads, etc. that contained eggs in small amounts. Just something to consider depending on how severe your son's allergy is. (Oh, and the little boy outgrew his allergy by age 4, so take heart! )
thanks darandon but i just looked on the kraft foods website. miracle whip does have egg yolks (who knew?)
Did you try the diet soda cake? Use the box mix and a diet soda that's it... If you don't want the aspertame us diet coke with splenda... Ask for help with the cleaning : ) Cake is more important ; )

At first we didn't know it was due to eggs. you find eggs in practically everything. His grandmother fisrt suspected it when she gave him french toast a few times and he threw up for 3-4 hours.. a few days later day my husband fed him some cheesecake(a tiny bite).. and he threw up again. the next day I fed him one of gerbers chicken dinners and he threw up.. i looked at the ingredients and there was egg whites listed. his doctor says its not a severe allergy and he will outgrow it, but i suspect he also get stomach cramps because he cries a lot.

I can't help with the recipie, but you might also consider it could be a dairy allergy. My nephew has the same problem you mention: eat then in a coulple hours, it comes back up. We too thought it was eggs, but after testing found out it's dairy. (The french toast my sis makes has milk mixed in with the eggs. I also make scrambled eggs with milk in them.) He now has to take a lactaid pill or avoid dairy. just a thought...
My 3 year old is allergic to Egg, Peanut, Walnut & Soy. The wacky cake is wonderful and so easy, as for the Ener-G I bought it to make my kids birthday cakes this year (wacky cake was made last year and I wanted something different, I did use it in the butterfly pan and it held the shape nicley) and I have had no problems with it. Of course I used it in box cake mixs but I have made aprox. 10 cakes with it so far and not had any problems. I love the stuff, for once I can make my 3 year old treats and so far they have all come out good. I have also made cake mixs using apple sauce instead of egg, about 2/3 of a cup for a cake mix calling for 3 eggs works good.

I use the egg replacer all the time and have never had any problems. I do a lot of baking for vegans and kids with food allergies. The egg replacer has been a God send for me. Possibly it was just your recipe? If you want chocolate cake I used the replacer in the chocolate mud cake recipe I got from here and it was amazing.
I had looked for some feed back on ENER-G on the martha stewart boards and the feed back I got was a good one. The problem, as several of you mentioned could be with the recipe itself. I used the directions on the box to replace three eggs. The texture was not as fine as I thought it would be. Do you all use the same 1 1/2 tsp + water = 1 egg ratio for your egg-free cakes?
well it didn't work for me. The cake was really weird and didn't cook That was with DH mix. Which it isn't made for. I was told that it will possibly work in Betty crocker mixes. That is what some use with it. but I just did the oil and egg. The flavor was the same; MAYBE just a tad sweeter.
I made a eggless choc cake last weekend for a religious function. It turned out really well, moist & soft. Here's the recipe.
1 cup butter (8oz)
1 can condensed milk (14oz)
2 1/4 cups self raising flour }
1 1/4 cup cocoa powder } sieve together
2 tsp baking powder }
1 tsp bicarbonate soda }
1 tsp vanilla
2 tbsp sour cream
1 can coke (12oz) - reduce if consistency is too runny
Cream butter & milk together for a few minutes. Add in vanilla, sour cream. Fold in flour & cocoa mix. Add in the coke last of all.
I had to bake this for 1 1/2 hour at 140C because of the thick consistency. Hope this helps.
