How Can I Color/paint Molded Chocolate?

Can I just use white chocolate and paint it with something when it comes out of the mold?

Gel colors thinned with something?

I'm thinking about using the same method I have seen people use when they do seashells, but I'm not sure how.

Depends on the effect you're after. If you want to paint details, the best way is to mix cocoa butter with powdered food color.

Seashells are usually marbled. To do that techniques, swirl your colors together in a small bowl, then gently tranfer the marbled chocolate to your mold. After unmolding, dust with dry super pearl luster dust.

Gel colors won't work because they're water-based. They'll just bead up.

An alternative, depending upon what mold you are casting, and the effect you want to achieve, is to use colored candy melts and paint the color(s) directly into the mold, then allow it to cool completely before you add the background color.
