Frost a 16in round cake and to level it? Man I had nothing but problems doing it because my leveler and spatula were not long enough.

The big cakes like that I try to level them before I even take them out of the pan. It seems to work most of the time. The I take my knife and cut it to do the filling. I am not sure if that helps you very much. icon_cool.gif

Yeah....I haven't done a cake that large yet and when I do I am sure that I will be scared.....LOL. Anyway, I would probably level it as soon as it comes out of the oven by pressing down on the cake with a clean tea towel. I can't help you with the icing part. I am sure it will take me forever to ice it when I actually attempt a cake that big! icon_confused.gif

Wilton makes a cake leveler for cakes up to 18" in width. I just double checked Joanns.com to make sure!

You can also do it as soon as it gets out of the oven, as someone suggested, and put a good 'ole level on the top of it to ensure that it is level. But be sure to do that at a few different points so you're assured it's level all the way around.

I tried that 18in leveler and because it has a blade rather than a wire it would create waves up and down as I leveled. does anyone know a website there they have really large spatulas?
