For Mother's Day my sister wants me to do a shoebox cake with a gumpaste shoe. She wants the cake to be a carrot cake with cream cheese frosting. Can I put fondant over cream cheese frosting since the frosting needs to be refridgerated? Also, is carrot cake dense enough to hold the weight of the fondant?

Thanks!

Bree

Carrot cake IS one of the denser cakes so theres no problem with the fondant weight. Fondant can be refrigerated if you are worried about the cc icing, but really it is fine to sit out.

The crusting cream cheese icing recipe on here has enough sugar in it that it is safe to sit out at cool room temp but fondant can be refridgerated as long as you don't touch it until it comes to room temp so you don't get fingerprints and such on the fondant.
