Does anyone have any tips to make a softer cookie? I baked over the weekend (in my new oven!) and it was so wonderful to have a consistently baked item come out of the oven...with my old oven I never knew what was going to come out! Everything came out beautiful but I would like to have a softer cookie, I make a peanut butter with a hershey kiss on top and a white chocolate chip with pecans (no macadamia nuts). The bottoms were lightly browned so they weren't hard but I would like a more chewy cookie. Used real butter in the recipes. Any ideas?
what about using margarine or shortening instead of the butter in the recipe? would that change the texture?
Real butter is definitely the way to go for better flavor, appearance and texture. Margarine just yields flat cookies.
Having said that, the only way I know of getting softer cookies is to bake them less. I do this with several of my recipes. Bake them for a shorter amount of time and allow them to cool for a minimum of 2 minutes on the pan so when you scrape them, they retain their shape. You could experiment with this, but given your recipes, I don't know if you'll be able to soften them without adding some other ingredient. You definitely don't want raw cookies for the sake of soft.
What do packaged cookies use for softness? Is it anything normal or is it hydrotinateglucoyuckiness?

all I know is even when I want and get a crispy cookie if I freeze them for at least 24 hrs. and then let them thaw......they're always soft and more chewy than hard and crispy........which is good if you want soft LOL So if you have time maybe you could give that a shot??
Since you were talking about Peanut Butter Cookies, I have a recipe that always comes out chewy. It's really good. I guess the secret to the recipe is that the cookies cook at 275 degrees. It takes a while to get them all cooked, but they are so worth it.
Peanut Butter Cookies
1/2 C shortening
1/2 C peanut butter
1 1/4 C packed brown sugar
1 egg
1 t vanilla
1 1/2 C flour
2 t baking soda
3/4 t salt
Cream shortening, peanut butter and brown sugar. Mix in egg and vanilla. Stir in mixed dry ingredients. Bake at 275 degrees 18 minutes or until barely done.
These cookies will get crunchy if you cook them too long.
Also, a trick I use to keep all of my cookies soft is to keep them in an airtight container with a slice of bread. It makes them nice and soft and I don't have to undercook them.
