Course Iii Cake Question

My second class of Course III is tonight and I was wondering if I should just torte my cake or if I should make another layer. In previous courses I've always made the cakes 2 layers (1 box mix for each) b/c I like them nice and tall but for tonight's class the instructions say to bring a square cake that's at least 3 inches high and I think just one box mix is going to do that, esp. if I torte it. We're going to be covering it with fondant. What has everyone else done?

When I took my classes it didn't matter how high or what size cake etc...you brought as long as you had something to cover for the fondant work you'll be doing.

When I did mine I did 2 layers, but my cake was still only 3 inches tall. I say it just depends on your personal preference. The only difference it is going to make is in how much you are going to have to roll out your fondant.

If you split a mix between to 8in pans you should have a 3in tall call. The layers won't be the full 2 inchs though. If you do want a thicker cake you can go that, just keep in mind you may need more fondant for it.

I just used 1 cake mix in my square pan. I torted and filled it.
It totally depends on how much cake you want to have in the end!
