I have had an enquiry to make a wedding cake for 300 people. I have only done one wedding cake before (3 tiered) which was nerve racking enough!!!
After much pacing around the room, I have managed to sit down to work out the size of cake needed. I have looked at 3 different serving charts, and each are very different! So I am thinking that if I made a tiered cake consisting of a 8/10/12/14/16 (round or square), that it should be enough. What do you all think?
What is the 'normal' size differences between cake tiers? I've done 2", but unsure of what is considered 'normal' (if there is such a thing!).
I don't yet know what detail they want on the cake, or how they want it set out, but I am already thinking about transportation. Has anyone ever transported a 5 tier cake before?!?!?!
Lastly - the ever important question - pricing! I was thinking about $900, but again, am unsure. Any opinions?
I know that I may not even end up doing the cake (they want a red velvet cake - never done one before but have seen recipes on CC), but would be grateful for any advice as it will help me anyway!!!

im no wedding cake expert, but i use 1x2x4 inch pieces for wedding cake sizes. wedding cakes aren't supposed to be large servings, they're just a light dessert to celebrate after (usually) a large reception dinner. square tiers will give you a LOT more servings than the round counterparts will. i think 3-4 inch difference in diameter look best, but you can certainly use 2 inch differentials. i think i would do 18, 14, 10 square which will give 310 servings by my sizes, and then a 6 inch anniversary tier. also, make sure they know how big to cut the pieces! you would hate to tell them its enough cake, but then have them cut 2x2x4 inch pieces and fall short. i would also transport each layer in a box and assemble on site. big cakes stacked in a car just terrifies me! hope this helps! i've never done one this big before, good luck!
I have done several wedding cakes and what you need to do before you stress yourself out is to find out what they want. You may decide on something and then it not be what they are looking for. I agree you will get more servings going with the square cakes. As far as pricing goes you have your basic price, fillings, buttercream or different frosting would be an extra charge and then other things that they want. A wedding cake for 300 is alot but you can do it.
