Timeline For Choc. Covered Strawberries?

Im delivering a cake with choc. buttercream icing, choc covered strabwerries onthe top. When should I dip them, and when should i put them on the cake. can this be done the night before?
Could you do everything the night before and just do the strawberries that day before you deliver the cake? It doesn't take long for the chocolate to set. I've found that sometimes the moisture from the strawberries makes the chocolate start to separate if they are done too far ahead of time.
The chocolate covered strawberries are very very tempermental, I would do them at the last possible second. IF you are delivering in the morning, then they would probably be ok done the night before. Just let the strawberries come to room temp before dipping so they don't cause condensation.
we will be leaving around 8 am to deliver the cake, but the wedding is not until 1, then the reception after...should i try to put them on in the morning before we leave? or take them with me dipped and put them on at the venue?
One other tip, don't wash the strawberrries in water. I just use a pastry brush to gently clean them. Let them sit on paper towels to draw away any moisture. I would do a couple ahead of time and see show they looked in the morning. Different weather conditions in and out of your home can make or break them. I have done them the night before with sucess. I don't put them in the fridge after dipping just in a cool dry spot, in my house the laundry room at night.
I wash my strawberries the night before I need them. Place them between layers of paper towel to dry. Put them in the frige. I take them out the next day and change the paper towels to dry ones, allow the berriers to come to room temp, replacing the paper towels several times to make sure all moisture is gone. Then I start dipping and placing them on the cake.
