I made my figurines using sugar paste (mixture of icing sugar, liquid glucose, water, crisco and gelatin). Each time when I put the decorated cake in fridge, I have this problem where the figurines started to 'sweat' and looked like going to melt. I understand that it's better to place figurines on buttercream than fresh whipped cream but personally I prefer fresh cream than buttercream.

My question is "What should I do to solve this problem?". Is there any replacement for sugar paste that can be kept in fridge without having any problem? Appreciate your inputs (would be better if you can provide recipe for the alternative). Thanks in advance.

Sorry for the long post. Thank you.

My best suggestion is to not place the figures in the fridge with the cake. If you can't get around that, try the marshamallow fondant instead. Regular fondant gets sweaty in the fridge also, but I have not had the problem with marshmallow fondant. You can find the recipe her on CC. It is basically 1 (16oz) bag of mini marshmallows, 1 (2lb) bag of icing sugar, & a few tsps of flavoring.

How about placing the figures that you make on a small plaque, and only place them on the cake just before it is displayed?

Thanks melissaanne for your suggestion. What I currently do is placed teh figures just before giving the cakes to my friends but the problem is I can't tell them to cut the cake straight away..... am also worry if the figures started to melt in their fridge. Since they are gifts, it would not be nice to have this to happen.

Thanks.
