Okay, I have only really cheked out this site for a day and a half and I LOVE IT!!! I am learning soooo much!
Two more questions...
#1: What is this Viva Paper Towel teqhnique people keep mentioning? I am totally lost on this one!
#2: Crumb coats... do you do them, or not? What is the big difference? Does it make frosting the cakes faster with the crumb coat? If you do use a crumb coat, what do you put on the cake first? A simple syrup? That apricot glaze I keep reading about? I really don;t know anyting about wither one.
THANKS!!!
Welcome to CC. Ok, first question, the Viva paper towel method is where you ice the cake as smooth as you can, then let it crust a little, not completely.
I usually wait 5 mins or so. Then you take a Viva papertowel (it has to be Viva) and lay it on the cake and smooth with your hand or a fondant smoother. You get a very smooth finish on your cake. Do it on the top and on the sides.
Question #2--I personally crumb coat everything. It is just my preference. It seals in any loose crumbs, which is my main reason for doing it. I hate crumbs peeking thru my icing. I use the same icing that I am icing the cake with.
Hope this helps and hope you enjoy this site.
Cindy
Hi, I always do a crumb coat too and I think its most important on choc. cake. That way it seals in the choc. crumbs. I also do the Viva, but it must be dry. I love the stuff!!! Sandy
So Cindy, does the Viva work better than the Fondant smoother? Which would you suggest? I have the fondant smoother, should I just try that on my crusted buttercream?
