I would like to substitute it in a cake batter. I'm making an italian cream cake and can't find the recipe that I always use. All the recipes that I can find require buttercream and I don't have any.

You can substitute milk plus a teaspoon of either vinegar or lemon juice. You can also substitute yogurt, although I usually mix yogurt with milk.

If consistency is important maybe half cream and half milk with the lemon juice or vinegar. that will give you a thicker mixture like buttermilk. After you mix the lemon juice or vinegar in, let it sit for about 5 mintues.

If you use buttermilk, I think you'll need to add at least 1 tsp. of baking soda. Check other recipes that use buttermilk and see what they us for soda vs. baking powder.
