hi all,
will carrot cake hold up or is it too light? i am doing a flower pot cake for my mom's birthday tomorrow and i was planning on making a white chocolate mud cake (how appropriate huh?) but my sister wants me to do a carrot cake instead. will a carrot cake with the crusting cream cheese icing hold up ya think? i was planning on using a 6 inch clay pot to bake the cake in.
thanks!

Well, it depends on your recipe, but all the carrot cakes I've ever made have been extremely dense and hearty, so I don't think you should have a problem...hope this helps!

I agree, the carrot cakes that I am used to are heavy and moist, not a light airy thing like some sponges that would flop. You should be fine.
