I have been decorating cakes for just a little over six months I completed the wilton courses so I feel somewhat confident well I had told the receptionist at my Dr. office that I do cakes and cookies she commented that the entire staff loved sweets so the next day I made up four different batch of cookies put one of each in 15 cookie bags made up some brochures and menus on my home computer and took them up to the Dr. office yesterday well I recieved a phone call a hour ago and all the ladies were standing around the phone passing it to one another each saying how good the cookies were and such then I spoke to a young lady she said that in august she was getting married and that it would be a little over 300 guest well I guess after all that my question is when I consult with her do I make a sample cake if so what flavor I have never done a wedding cake before so do I copy pictures from the internet that I feel confident in doing all that I have ever done is small occassion cakes lots of questions If someone that has experience in wedding cakes and consultation could you respond and don't mind answering my hundreds of questions please respond stating I can direct these questions to you.
Call her and ask her which 2 or 3 flavors she's considering, then make some cupcakes of those or a small cake (freeze any leftovers) for her to sample, along with the frosting she'd like, and filling samples. Bring Wilton and other cake magazines; ask her to check the web, too, to get an idea of what she'd like. Find out what her colors are. Does she want flowers on the cake: real, silk, sugar? If her budget is real tight, she might want to consider a smaller display cake, and have sheet cakes in the kitchen to serve her guests, also. Find out where the reception is, time of day. Include a delivery/set-up fee, rental fee for a fountain or fancy cake stand. Get a deposit on anything you want back (separator plates, etc). Ask her if she wants a groom's cake. Check your local bakeries for going rates; don't under-sell yourself! Let us know how it works out!
