Selling At Craft Fair/bake Fair. How Far In Advance......?

I am going to sell at a local craft fair/bake fair in my town. It is going to be on May 5, I am planning on making a variety of different flavored and maybe little cakes to sell. Some of my cupcakes have molded chocolates on top and sometimes I use chocolate transfers. My question is how far i advance should I bake and store the cupcakes? What about my chocolate molds. I want my items to be fresh but I also don't want to be overwhelmed the days before. Thanks for the help.

do a search in the CC forumns for threads on freezing cakes & cupcakes. There has been many in depth discussions on this that will prove helpful.

I think you'd be safe to start baking and freezing now, whenever you have time. May 5th is less than 2 weeks away, and frozen cakes should be fine for that amount of time.
