Leveling/smoothing The Cake Makes The Frosting Way Too Thick

I have been making cakes for friends for years so I am an amateur but have taken multiple classes and have had practice. I am a bit of a perfectionist, I always want the cakes to be level and very smooth. I do not like it when you can see bits of the cake peeking out from the top or around the bottom of the cake. In order to do this I usually add three layers. I do a crumb layer and let it harden in the fridge. I do another layer of frosting to get it almost all smooth and let it cool and harden. For the last pass I put one more layer of frosting on and do my final leveling and smoothing of the cake. Most people complain that my cakes have too much frosting. What do I do??? How do professionals always get their cakes to look so perfect and smoothm, no cake shows on the sides or top, and not have too much frosting? Any suggestions?

CAn you see the cake after the second layer? If not, then smooth the layer with parchment instead of putting on a third layer. That way it will be thinner. Also, are you leveling the cakes before youstack them? If you have a hump it would be harder to cover the cake and make it level without using more frosting.
I have the same problems sometimes. I found this article and thought that it was an interesting way to solve the problem. Can't wait to try it on my next cake.

I use lots of icing to get the tops & sides level & smooth, so i compensate for it by not torting my cake. I only use one layer of filling?frosting inside.
