Okay-I am stressed today as I am leaving town tomorrow and have my final class cake due thurs. I am trying to do as much in advance as possible, so I won't be stressing at the beach with my friend-i know whine whine. anyway, I making the final tiered cake and would like to cover it in fondant. Can I put bcd icing on it and let it sit out until Thurs and be eaten on Friday-instructor said to not put in frig due to condensation or use class bc with no butter (don' really like this recipe). Any thoughts would be appreciated-on a tight timeline-tia icon_eek.gif

Be sure to use a non-perishable filling. Try to avoid dairy, eggs, etc.

I don't plan to put a filling-just a little icing between layers or possibly jam. I am just worried because bcd has butter and milk in it.....It is warm here! I don't want anyone to get sick!

icing with butter/milk can sit out fine for 2-3 days. Probably longer really. I dont really see any problem though with putting it in the fridge if it makes you more comfortable. Just give it enough time to come back to room temp if you are worried about the condensation.
