Here is my take on it, from a previous post. I think the cake mix extender is fabulous.

Jackie,

I use it all the time. In fact just used it a little while ago with a yellow cake. Which one are you planning to use? I use one posted by another member and love it. I adapt it to whatever flavor cake mix I'm using.

Here it is:

1 cake mix (no pudding added)
1 cup unsifted cake flour
1 cup sugar
1 4-serving pkg instant pudding (to compliment cake flavor)
1/2 tsp salt
1/2 tsp vanilla
4 eggs
1 1/3 cups water
1/2 cup oil
1 cup sour cream

Mix all ingredients in large bowl. Mix for 2 mins on medium speed. Bake at 325 degrees till toothpick comes out clean. This will make a 9 x 13 cake.

Cindy
