Any reason I can't freeze cream cheese frosting? I'm doing an applesauce spice cake w/ cc frosting for a graduation cake. The tricky part is that I'll be out of town on the date of the party. So I plan to make the cake, frost & decorate...then freeze and hand over to the party people. I'd think in theory that's just fine as grocery stores and bakeries routinely freeze carrot cakes w/ cc frosting.

See any reason it wouldn't be a good idea??
