Well, my 25th Anniversary cake is finished and ready to go. I took Squirrelly and everyone's advice to use the central dowel. Thank you pancake for posting your sage flowers cake. And Thanks to everyone who helped. It's certainly not perfect. Squirrely told me I had to go in with my central dowel from the bottom because of my tiers being fondant covered and I did that but I didn't cut my dowel short enough and it still poked a hole in my top layer so I had to cover with the gumpaste dogwoods.

Your cake is beautiful.

I have never done the central dowel thing. Was it hard? Did you "prehole" your cardboard circles before hand?

Thanks

ok, probably a dumb question, but . . . icon_redface.gif How do you put the dowel in through the bottom of the cake?

Beautiful job on the flowers.

Thank you guys. Okay... I really didn't say that right. The central dowel is usually sharpened and driven through the top layer but in this case it couldn't be because I was planning on having nothing on top of the top layer at all except the fondant covering and I didn't want a hole showing. I don't know if it was the best way to do it but I put holes in my cake boards first and then put the dowel in through the bottom layer and centered the other layers and their boards on top of the central dowel. Does that make any sense?

yeah, that makes much more sense. dunce.gif maybe I am just tired, because I am sitting here imaging you trying to balance the cake and shove the dowel through it!! dunce.gifI think maybe it's time for a caffeine break, lol!!

Sure it does! I did my last wedding cake like that....but it came out a little off-centered...any tips?? I'll try to find the pic to show.

I loooove your cake! I think the gumpaste flowers are perfection...so why not show them off at the top of the cake? Maybe you were just meant to have that hole in the top! lol

It is hard to get it centered when you are looking at it from underneath..all I can say is is poke and pray!!! icon_lol.gif The gumpaste dogwoods I had ordered from caljava.com. Luckily I anticipated that I would have SOMETHING go wrong. So I covered my tracks.

Ok...found it...I tried to get it at an angle where it wasn't too bad but you can still see the off-centeredness of it. : )

Well, the weekend's coming up....maybe you'll have a chance for some couple time then. icon_rolleyes.gif

Thanks for the compliments...you're too kind. Do you know that I had a lady request a 3D black cat today made with my butter/chocolate marble & chocolate icing...plus she wanted it sitting on a cakeboard iced to look like a giant cookie...with real choc. chips around it. She wanted it to feed about 20...and she only wanted to pay $30.00 for it....I politely told her no way. icon_evil.gif

I know! I live in a small town and people just do not expect to pay very much at all. That sounds like a cool project though, Genna. She's just wants to get Collette Peters quality at a Wal-Mart price..lol!

Thank you tiggy. I just learned it too and I'm not very good at it yet. I did one petal at a time like you're supposed to but my royal icing kept drying fast anyway and the petals were cracking on me before I could get them brushed. I think maybe my royal was a bit too thick.

Sorry for butting in, but I just love the sage embroidery cake. I saw one while searching different websites and would love to try it. I see that you use royal icing for the petals. Can you use a thinned down buttercream instead. Maybe it wouldn't dry so fast. I haven't tried it yet, but would like to this weekend. Any advice?

I'm sorry. My Internet service was down all day yesterday. I don't see why you couldn't use a thinned-down buttercream. It should do the same thing. But then you would have to be careful about smearing. Then again, you wouldn't have the problem with your petals drying as fast as you do with the royal icing. You have to do one petal at a time because the royal icing dries so fast.
