Viva Method?

Can someone please explain to me the Viva Method from start to finish. Is there a certain buttercream recipe that should be used? I was only taught the hot knife method and I use swiss merengue buttercream which I doubt would work with paper towels.

As long as you use a bc icing that crusts, you'll be fine.

Just ice you cake...try to get it as smooth as you can and let it start to crust.

Put a paper towel on the cake and very gently rub it to smooth the icing.

If your icing sticks to the paper towel...you need to wait longer to do this......your icing hadn't crusted enough.
