Please help... I am doing my first wedding cake for a friend on Saturday (I am also in the wedding...) I am looking for a recipe for a strawberry cake from mix. Bride has just decided she wants a tier of strawberry cake, but no strawberry pieces in the cake. I'm seeing all these great recipes that include strawberry pieces. Any suggestions? Thanks a ton!

Why can't you just use Strawberry cake mix?

This one is from the CMD in the cupcake book. I am planning on using it in the cake I am making for a 50th birthday this weekend, it does call for finely chopped strawberries but maybe you can puree them to get rid of the pieces?

1 pkg white cake mix
1 pkg strawberry gelatin (3 oz)
I cup finely chopped strawberries with juice
3/4 cup milk
3/4 cup vegetable oil
4 large eggs

mix all ingerdients with an electric mixer and bake according to pan you are using. This will make 24 cupcakes or probably a 8 or 9" round.

I usually use the DH strawberry cake mix, what is called for on the box, an additional egg, and a package of cheesecake pudding.

Why not use the white almond sour cream recipe and change it up by using strawberry flavoring instead of almond? I think that would make a wonderful cake and it is dense enough for a great wedding tier.

I agree with this. I used the WASC recipe and made raspberry cake a few weeks ago, and it turned out great! Maybe you could also swirl strawberry puree through the batter once you have it in the pans ... that would be yummy!!!

i find that the boxed strawberry cake mix has a very chemical taste to it.
I would suggest using fresh strawberries or a strawberry extract. Blue0877's recipe sounds delicious!

I can't wait to try it...it does sound so good. I "stumbled" accross it in the CMD cupcake book...there are a lot of great recipes in there!!

I use Pillsbury strawberry mix and add pureed strawberries and a "little bit" of juice as part of the liquid and also add strawberry flavoring.

I LOVE the cheesecake pudding recipe. This is the only kind of cake that one of my sons will eat, so I think I'll try the cheesecake trick for his birthday!

Alamo,

That is a great thought, I wondered about that with other flavors.

I have used the same recipe with other flavored box mixes and all I get are raves about them. The chocolate is very good and has that nutty flavor from the almond extract. I haven't tried the strawberry mix but I bet it would be delicious with the sour cream. YUMMY!

I made a strawberry cake for practice on my nieces graduation cake. I just made the WASC recipe with a Strawberry cake mix instead of White and used Strawberry Juice instead of the Vanilla and almond. It was SOOOOOOO good!

I used DH white cake mix and put a small box of strawberry jello in the batter. Everyone said it was delicious.
