How much cake is needed to feed about 35-40 people? I find that figuring this out is harder than pricing! I HATE the stingy Wilton-size "sample" bite-type servings, I like them to be at least 2x2 or so. Would a stacked cake of 8 inch on top of a 10 inch tier be enough?

If you want a quick way to look, go the the back of wilton yearbook.. they list both a party size and wedding size. the party size is a 2x2 piece.
Or you can go to Earlene Moores website and print off her serving chart.

as for your layers, don't really know, but i would think so. however, and please don't take this as being argumentative, i have found with the two large wedding cakes that i have done, they have said that they had too much cake for the number given. i base it on the wilton servings. it doesn't sound like a lot, but if you think of it as being a 4" high piece of cake, it doesn't seem so small after all...at least it doesn't seem so to me. again, that's just one opinion...and i will say that i know the weddings had a lot of other food, too.
