"present Cakes" - What To Do When Need To Refriger

Hi== It seems I always run across the fondant/refrigeration dilemma. I'm doing a cake decorated like a present for the first time. Its all buttercream with the exception of the fondant bow. It must be refrigerated-- and the customer will pick it up the day before party.
When this happens, do you refrigerate the bow and everything? Or should I give the fondant bow to the customer in a separate box and have her place it on the cake the next day?
I would LOVE some advice on this. Maybe I should just buy some Satin Ice instead of MMF if that will make a difference...???
I would just stick the bow on top when the customer picks it up. Just dab some buttercream on the bottom and stick it on. I would not put it in the fridge.
Perhaps you could get her ETA and then put it on before she gets there. From the time she comes the cake is going to be out of the reefer anyway; is that right?
Thanks--Acutally, she's picking the cake up on Friday afternoon and going to keep it in her frig. until the next evening. I wasn't going to put the bow on until right before she comes to pick it up... but was concerned about what would happen in her frig. for all those hours. Schmoop--that's great to know-- how long were your present cakes in the frig?
i've done cakes completely covered in MMF that have been refrigerated with no issues....granted, i don't recall any being in the fridge for more than 1-2 days, but i think if they lasted that long with no problem, i'm not sure another day or 2 would make much difference
the last cake I did....the baby shower with the fondant baby toys and bow went into the cooler at my husbands work...which is quite a bit colder than a home ref.....and it had no issues at all! I was very worried about it...when my husband called and told me they stuck it there...he got called a few names and given a few thoughts!!! I couldnt sleep that night....it sat that over night until the next afternoon....they said it was fine. ![]()
