Feverfixer, the SugarVeil icing stays flexible for quite a while, but will eventually dry hard. It's then pretty fragile. And again, how long that takes is going to vary. You just have to experiment to get the feel for when it ready to move to the cake or cookies). I don't think you need the whole system--you could start with the icing with a bag and tip. I really like the airpen, though, because it's so much easier for me to control and is easier on my hands. I'm putting together a wedding cake now and am going to try using the icing directly on the cake for some of the decoration. Will let you know how that works.
I bought the older version of the sugarveil airpen off of ebay for about $90. It came with the compressor and a bunch of different tips. I haven't been able to use it yet, but I'm going to very soon. I bought a bag of the sugarveil icing mixture to try out with it.
