Help!!! How Long Will A Mmf Covered Cake Keep?

Hi all,
I could really use some help today. I have just been asked to make a baby shower cake for May 5th, but I am going out of town on the 4th! AHHH! I hate to dive up the opportunity, especially because it is for an old friend and she is so excited about it.

So, here is the problem. They are wanting a white cake w/ fresh strawberries and bavarian cream filling. I am going to frost it in buttercream and then cover it with MMF. So here is the delema--- How long will it keep? Will the strawberries be a problem. (I know that is probably a dumb question...) Ahhh! I just don't know what to do!

I have never tried to refrigerate a MMF covered cake, so I have no idea if that would totally ruin it. So, how about if I just made the details in MMF and didn't cover the entire cake with it? Would that work? Would the strawberries and the cream stay fresh enough from thursday to saturday. Because I am thinking that I would have to do most of the construction either thursday night or friday morning.


Any help you coul dgive me would be soooooooo appreciated!!!!

I sort of feel like pulling my hair out right now, trying to figure this out!

I made a cake on a Thursday morning..iced it with buttercream then covered it with MMF and left it on the counter until a party on Saturday afternoon and it was fine! However, it was a simple cake without fancy fillings..so I'm not sure about the strawberries, etc.

It'll be fine. Bake your cake on the 1st, fill and frost it. On the second put the fondant on and do your decorating. Deliver it on the 3rd. Have her put it in her her refrigerator and bring it out 2-3 hours prior to the party to come to room temperature.

Actually I just saw the party's on the 5th so I'd start on the 2nd or 3rd. I refrigerate all of my fondant cakes since I use IMBC. Depending on the outside temperature it may or may not sweat when you bring it out (usually if it's a warm day it sweats) but not a problem as the cake warms up the moisture will evaporate and it'll be wonderful!
